Gazpacho
Maria made this wonderful Gazpacho the other day and brought some over for the kids and I. Her recipe is a bit different than some others because it leaves the vegetables in larger pieces more....stew-like. It is a wonderful thing. So head to the Farmer's Market or supermarket and load up on some of these great seasonal veggies.
Maria's Gazpacho
1 1/2lb fresh tomatoes , seeded and chopped
1 1/2 C. tomato juice
1 med. cucumber peeled, seeded and chopped
1/4 C. finely chopped green pepper
1/4 C. finely chopped onion
2 Tbsp. olive oil
2 Tbsp. white wine vinegar
2 cloves minced garlic
1/4 tsp. dried oregano
fresh cracked black pepper to taste
In a large bowl combine all of the ingredients except pepper. Refrigerate til chilled (about one hour) add pepper to taste. To spice this up you can add something like Tabasco Sauce or chili powder.
